Creamy Keto “Potato” Salad

Potato, Po-tah-toe. It doesn’t really matter how people pronounce it, if they are committed to a keto diet (low/no carb diet), potatoes will no longer be a part of their vocabulary or their diet. That’s okay though, after the first week or so, people won’t miss them anymore. There is a great alternative. Cauliflower it’s a similar root vegetable and it’s way easier to prepare because there will be no peeling! People can use cauliflower to make almost every potato dish just as good if not better than with potatoes!
